Duane A. Bailey and Duane A. Bailey: Java Elements - Principles of Programming in Java. McGraw-Hill Higher Education, 2000.
It is targeted at people with no programming experience and takes a gentle but thorough approach to using Java to teach good programming principles. We will more or less follow its contents, so everyone should buy a copy.
The book comes with a supporting website at http://www.mhhe.com/javaelements that contains Java libraries, source code, lab materials and some solutions to exercises.
You need the element library either as element.zip or as element.jar to run most of the examples in the textbook. Download it and include it in your CLASSPATH (or mount it as an archive if you use Forte).

Herbert Schildt: Java 2 - A Beginner's Guide, Osborne / McGraw-Hill, 2001.
More verbose than Bailey's book, it has a similar structure and approach. Unfortunately, this book was recommended to me after the start of the course, so it's not on the official list of recommended books.
David Flanagan: Java in a Nutshell, 4th edition. O'Reilly, 2002 (covers Java 1.4).

Very fast-paced tutorial for Java, with fairly complex examples. Appropriate as a reference book.
Cay S. Horstmannn, Gary Cornell: Core Java 2, vol I: Fundamentals. Sun Microsystems Press, 2002.
I like the style, clear and concise.
Bruce Eckel: Thinking in Java, 2nd edition. Prentice Hall, 2000.
A pretty good introduction to Java as an object-oriented language, but it assumes some familiarity with programming (in a different language). Also available online (free) at http://www.bruceeckel.com.
Ian F. Darwin: Java Cookbook - Solutions and Examples for Java Developers. O'Reilly, 2001.
As the name suggests, it's a book of receipes on how to do various things with Java.
